SKINNY 3 BECOMES SKINNY 2

Not that we have been as faithful as we should about working out but I am sad that our skinny 3 is becoming skinny 2. Gabe has received a well deserved promotion and will not be in our office anymore. He will not be able to join us at our lunch workout anymore.

I will miss you Gabe! Maybe you could do a surprise workout visit every once in a while.

DINNER TONIGHT

Grilled Flank Steak with Black Beans Corn and Tomatoes


Ingredients:
  • 1 1/2 lb flank steak
  • 1/2 tsp cumin
  • 2 garlic cloves, crushed
  • 1/2 tsp kosher salt
  • fresh cracked pepper to taste
For the black bean, corn and tomatoes:
  • 3 tbsp red onion, minced
  • 1 tsp olive oil
  • 1/4 cup fresh squeezed lime juice
  • 2 medium vine ripe tomatoes, diced
  • 1 cup canned black beans, drained and rinsed
  • 1 cups frozen corn kernels (fresh is fine)
  • 2 tbsp finely minced cilantro
  • kosher salt and fresh pepper to taste
Directions:

Season steak with the crushed garlic, cumin, salt and pepper and set aside 5-10 minutes.
Combine red onions, olive oil, lime juice, salt and pepper in a medium bowl and set aside a few minutes. Add tomatoes, black beans, corn, cilantro and set aside.

Heat a clean lightly greased indoor or outdoor grill on high heat. Grill steak on high heat, 6-8 minutes on each side or until your desired degree of doneness. Let the meat rest about 5 minutes before slicing. Slice the beef into thin slices across the grain, place on a platter and top with corn, black bean and tomato salad.

New Challenge




Okay, for the past month, Gabe, Alainna, and I have been slackers when it comes to our diet. However, I decided for all of us this weekend, that we have to get back at it this week. My new goal is 5 lbs loss by the end of April. I know that is a pretty lofty goal for me, but I have told Alainna and Gabe before that I have to set lofty goals to give me something to shoot for.

So, yesterday Gabe, Alainna and I all went downstairs to work out. It was a good workout. We did Gabe's new circuit for another week (since NONE of us did it last week), we figured another week of it would be good!

Anyways, I also cooked finally again last night. It was a new recipe for SkinnyTaste and was DELISH! It was called Turkey Meatloaf Cupcakes with Mashed Potato Frosting. See link below. They were really good and filling and two of them only had 250 calories. Jacob even ate them and liked them! Woohoo!

Anyways, we are eating the leftovers tonight for supper with some vegetables probably!

So, the challenge is on, 5 lbs in one month! The question is, will Alainna and Gabe join the challenge!!!???

Great Day/Great Workout

Holly and I worked out and Gabe flaked out! What a great workout though!! I do have to give Gabe credit, he came up with this circuit. Too bad he can't hang. Anyway, this one is tough but you feel GREAT after your done.

So start with bench press on the ball, squats, triceps, lunges, farmers walk, run in place, step ups, and last sit-ups. Oh yeah hurdles too, how did I forget those? Like I said tough but rewarding. Do each for 3 minutes. This one is done in time increments not reps. 😊 Can't wait till tomorrow!!!

Back from Rome

Okay, Sam and I got back from Rome last night and back to the diet again!

Rome was great, but I ate LOTS of bread and gelato...NOT on the diet. However, getting on the scales at lunch today, I only gained about 1 lb...not bad! I think that is due to the amount of walking we did last week. It was OUT OF CONTROL! I think I exercised more last week than I did during the entire last month. I am not joking when I say we walked 10 miles a day or so. My body was hurting by the end of the week. However, it was well worth it getting to see all the sights and such! We did as the Romans did!!

Gabe, need a new circuit workout of the week now!

WORDS AND ACTIONS

I am coming to realize that working out alone is sometimes a good thing. It makes me realize that I actually have the motivation and drive that I think I lack. I have been so inside my head for the past few weeks that it also has given me time to think and try to clear my head. I admit I over analyze everything. My mother has always told me that actions speak louder than words but I keep getting caught up on words.

Enough on words(and my head), now actions.
I have been working out. 20 minutes treadmill and the morning expresso circuit. Love the mountain climbers, donkey kicks, and, of course, crunches. My body is holding up better than I thought with the new circuit. Its tough, but I like a challenge and the feeling of accomplishment. I can do it! Yay!
